I know, I know. I’ve been MIA from the blog for a long time. Work has been exhausting and I’ve barely had a chance or felt like doing the things I wanted to do. Although I’ve been keeping up with my running and exercising, I’ve been eating poorly. Totally stress eating–at work, at home. Not to too much excess, just junk food. Leftover Easter candy doesn’t help.
I decided that I needed to focus on making more meals at home; lighter, healthier ones. The other night, Baja tacos sounded amazing. My plan was to throw a bunch of somewhat healthy pre-made stuff together, but when I went to the grocery store Friday night after work, what the $#&*?!?! They didn’t have pre-made pico de gallo.
Instead of driving to another grocery store, I begrudgingly picked up ingredients for pico. Plus I also got some shredded lettuce, feta, an avocado, those new Stand ‘n Stuff tortillas (which are, by the way, amazing!), frozen breaded fish, and pre-made shredded taco chicken:
I spent some time researching pico recipes online. Usually, I am too cilantro heavy, but I made sure to measure all my ingredients and, even though it took some prep time, the pico turned out amazing! I added a few ingredients I found in other recipes, too:
1 1/2 cup seeded, diced tomatoes
1/4 cup diced red onion
1 minced green onion
1 tablespoon diced jalapeno
1 tablespoon minced garlic
Juice of 2 limes
2 tablespoons diced cilantro
Salt and pepper
So, not to toot my own horn or anything, but dinner was pretty amazing! I just wish I was a better foodie photographer.
So I did end up eating some chocolate after that, but I think the veggie-heavy dinner made up for it…at least a little.
Hopefully I’ll be able to stay motivated at this! Making meals is a lot of work–I don’t know how my sisters do it all the time, and with kids!
